We aren’t dancin’ in the streets of spring just yet… How about a hearty, delicious soup?
Vegetable Barley Soup
1 cup hulled barley
1/2 yellow squash chopped
3 cloves garlic minced
1 small onion chopped
1 cup chopped carrots
1 cup chopped celery
2 Tablespoons olive oil
Roughly 8 cups of vegetable broth

Add olive oil to a soup pot and saute carrots, onion, garlic and celery until they just start to become soft – the onions will be partially translucent. Add broth, barley, squash and spinach. Boil for at least 20 minutes. You can judge if you need to add more broth. For vegetable broth, I use containers or a veggie bullion cube mixed with water.
Enjoy!! Then, curl up with a warm blanket and watch a good movie. Oh, and light a fire if you have a fireplace!! Ahhhh….
