I have to venture off the vegan path just far enough to enjoy my favorite dessert in the whole wide world… Key Lime Pie

Crust

1 1/2 cups graham cracker crumbs
6 Tbls melted butter
process together the crumbs and the butter and press flat into a pie dish

Filling:

1 (14 oz.) can of sweetened condensed milk
4 egg yolks
1/2 cup lime juice (about 6 limes)

Stir filling ingredients together with a hand blender

Put graham cracker crust in pie plate into the oven at 350 degrees for 10 minutes

Remove, cool, and add filling

Place pie in oven for 20 min. (this step is only to make the eggs safe to eat)

Remove and chill for 6 hrs or overnight – you can tell when the pie has set and is somewhat firm

Enjoy with whipped cream – made yourself from whipping cream is the best!
